Green Papaya Carrot Curry
Ingredients:
A hearty curry dish that is so nourishing and satifying, made with local island papaya, beans and carrots and fresh coconut milk.
- 1 green papaya
- 4 carrots
- bunch of fresh green beans, chopped
- 2 cloves garlic minced or crushed
- 1 onion finely cut
- 1/2 tsp turmeric powder
- 1/2 tsp mild curry powder
- 1 tbsp coconut or raw sugar
- 1/2 cup coconut milk
- 1/2 cup water
- salt to taste
- 1 tsp coconut oil
- few leaves of corander or any other herb
Method:
Peal the papaya and carrots, cut in cubes. In a sauce pan, heat some oil, add onion and sugar, fry on medium heat for 5 min. Add spice powders, roast for 30 seconds, add papaya, carrots and beans, water, cover with a lid and let simmer on low heat until tender (about 15 min). Add garlic, salt, coconut milk, cover and simmer for 5 min to absorb all flavours. Add the finely chopped herbs.
Options for Making it into a chicken or fish stew:
One can add cut pieces of chicken and cook for 10 to 15 min until the chicken is fully cooked. This makes it a hearty stew/soup with chicken. Similarly fish can be added and cooked until all flavours absorbed.
Serving Suggestions: Serve on mashed kumara, basmati rice or quinoa.
